Ingredients

For 4 servings.

  • 4 cloves garlic, minced
  • 1 sprig fresh rosemary (optional)
  • 2 tbsp tomato paste
  • 2 cans chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 cup elbow macaroni
  • ¼ cup grated parmesan (optional)

  • 3 tbsp olive oil, plus more for serving
  • ¼ tsp red pepper flakes
  • 1 cup water
  • ½ tsp salt
  • ¼ tsp black pepper

  1. Heat the oil in a large pot over medium heat. Add the garlic, rosemary sprig and red pepper flakes and cook, stirring, 1 minute, .

  2. Stir in the tomato paste and cook 1 to 2 minutes, until it darkens to a brick red.

  3. Add the chickpeas, broth, 1 cup water and the salt. over high heat, then and 10 minutes.

  4. Scoop out about 1 cup of the chickpeas, mash them with a fork, and stir them back into the pot.

    Dolly’s tip: The mashed chickpeas make it thick and creamy with no cream at all.

  5. Stir in the pasta and , stirring often so it doesn’t stick, 10 to 12 minutes, until the pasta is tender and the stew is thick.

  6. Fish out the rosemary sprig, with the pepper, and taste for salt.

  7. Ladle into bowls, with a little olive oil and sprinkle with parmesan.
